What is your name and what do you do at Kombu?
Hi, my name is Shari, I am the local produce co-ordinator and mostly work within the produce department/section 🙂
What is your favourite product – and why?
It is really hard to narrow it down to a favourite, especially when I receive so many amazing fresh local and market produce deliveries every week. But I am going to choose Kay and Mark’s beautiful local oyster mushrooms. They are amongst the prettiest produce we have (I think). There are so many ways to eat them, but my favourite receipe follows…
Shari’s Clear Oyster Mushroom, Miso and Kelp Noodle Soup
Chop onion, garlic, ginger and chilli
Fry ingredients in coconut oil
Add 2 tablespoons of Miso
Prepare veggies of your choice (i.e. bok choy, beans, broccoli, capsicum, zuchinni)
Add veggies and oyster mushrooms and allow to cook for 2-3 minutes
Add broth or stock and simmer for a further 10 minutes
Add pre-prepared kelp noodles (or vermicelli rice noodles )
Serve with coriander, bean sprouts and chilli
* Optional add meat, seafood or tofu

I love being surrounded by beautiful food and products. It really is so inspiring being around yummy food. We also have the best team, who I love dearly. The favourite part of my day at Kombu is talking and ordering from our awesome local growers and finding out what produce they are able to supply us for that week. Come in and check out our local variety!
