Summer Pesto Pasta

This delicious pasta dish is quick and easy to prepare on a hot summer evening


½ cup unsalted macadamias
½ cup pepitas
½ cup olive oil
½ bunch basil
1 small clove garlic
Pinch of salt
Juice of 1 lime
1packet (375g) pasta

Step by Step

To make the pesto mix place all the ingredients except the lime and pasta into a blender and blend until fine.

Place the pasta in boiling water with a pinch of salt and dash of olive oil. Drain after approx. 8 minutes whilst al dente, toss in a colander with a dash of olive oil and then stir in the pesto mix.

Serve onto warm plates, add a sprig of basil, and squeeze the lime juice over the dish.
