Almond and Carob Drops

A great way to use up almond meal after making almond milk

Ingredients

Almonds
Carob powder
Cacao powder
Rapapdura sugar
Cardamom powder

Egg

Butter

Step by Step

Night before – measure one cup of almonds and soak overnight in enough water to cover.

Morning – remove soak water and add three cups of fresh water to vitamix blender with the cup of activated almonds. Blend well. Pour through milk bag to make almond milk. Squeeze bag to extract milk. Now put two teaspoons of Rapapdura sugar into mixing bowl, add one egg, five tablespoons of carob powder (this helps sweeten and dry out the dough – home made almond meal is wetter than store bought almond meal), two tablespoons of cacao powder, 1 teaspoon of cardamom powder, and two tablespoons of melted butter (I add butter simply for taste, you could probably wing it without – but in my opinion, the taste will be compromised).

Stir well with a spoon and then on a buttered/oiled baking sheet create biscuit drops using a teaspoon and a tablespoon (see the video for technique).
