These brownies are less sweet than normal brownies but have a great taste that will leave you wanting more. High in calcium and protein, these brownies have the added bonus of being sugar, dairy and gluten free, so there is no excuse for not enjoying them
1 cup Adzuki Beans
3 cups Apple Juice
¼ cup Almonds
¼ cup Sunflower Seeds
½ cup Muscatel Raisins
1 ½ cups of Brown Rice Flour
1 teaspoon Baking Powder
1 teaspoon Cinnamon
½ cup light Carob Powder
½ teaspoon fine Sea Salt
1 tablespoon Tahini
1 tablespoon Rice Syrup.
Step by Step
Soak adzuki beans overnight then discard the water
Place adzuki beans in pan with 3 cups of apple juice and cook. until beans are soft.
Blend beans and apple juice until creamy.
Peel and grate three apples and stew until soft.
Finely chop the almonds and sunflower seeds in blender.
Heat oven to 180 C.
Place all the ingredients in a mixing bowl and mix together.
Grease a square cake tin and pour in the mix.
Press the mix into the tin and smooth with spatula.
Bake in oven for approx. 1 hour and 15 minutes until the top is dark and firm.
Cool tin on a rack for 15 minutes and then remove cake from tin.
Cut cake into squares and serve with organic cream (optional).
