Gluten Free Pesto Pizza

We have decided it is time for a recipe that is healthy, will keep the children happy and is easy to prepare. It is also gluten free so it can be enjoyed by the increasing number of people with wheat and/or gluten intolerance. With so many colds around at the moment we decided to replace the traditional (but mucous forming) cows cheese with goats cheese. To battle off the colds we also increased the amount of garlic.

Ingredients

Pizza

Celtic Bakery organic rice pizza base
1/4 medium pumpkin
1 sweet potato
1 zucchini
1 broccoli
Handful snap peas
Couple of mushrooms
Handful of cashews
1/2 block Chevre goats cheese
1/2 jar sun-dried tomatoes

Pesto Sauce

Handful basil
1 clove garlic
Handful pine kernels
1/4 cup olive oil
Pinch salt

Tomato Sauce

Two ripe tomatoes
2 cloves garlic
1 onion
1 heaped tablespoon coconut oil

Method

Start by deciding which sauce you would like to use. If you can't decide then you can always do what we do and make half with one sauce and half with the other. Making pesto sauce is easy; just take all the ingredients and place in a blender. Blend to a medium consistency and then spread on the pizza base. (Handy hint #1: if you prefer a thicker doughier pizza base then replace the Celtic Rice base with a box of Orgran Gluten Free Pizza mix). If you prefer to stick with a tomato sauce then dice all the ingredients and once the coconut oil has melted, throw into a small pan. Fry on a medium heat until the ingredients are well cooked and the liquid from the tomatoes has nearly all evaporated. Spread on the pizza base. (Handy hint #2: If you are in a real hurry or fresh basil is not available you can use a ready-made pesto or tomato sauce mix. Both are available at Kombu Wholefoods).

Turn the oven onto 150C (to pre-heat). Bring some water to boil in a medium pan and add roughly chopped pumpkin and sweet potato pieces. Place chopped broccoli, zucchini and snap peas in a steamer on top. Approx. 5 minutes later remove all veggies from heat and drain. (Handy hint #3: If you have used organic veggies then keep the water - now full of vitamins and minerals - and use it as stock for tomorrow's soup). Sprinkle the veggies and all remaining ingredients artistically on top of the sauce and then place it in the oven for 10 to 15 minutes. Remove onto a wooden board and place on the table. Watch as everyone tucks in to a quick, delicious and fun meal that is packed full of veggies and cold battling goodies!
